I love having fresh eggs from our chickens, but have you ever tried to peel hard boiled fresh eggs? It is not pretty.
The peel and the egg never want to seperate. It takes a long time. By the time you are done, you are left with very little white still attached to the yoke and the rest is stuck to the many little bits of shell that didn't want to come off. My kids think that this make the eggs taste worse or something because they always fight over who gets the best looking egg. It doesn't even matter that I am going to cut it up for them and they will never know the difference. But I recently came across a great idea on how to get fresh eggs to peel perfectly! The secret is to steam them!
I just get some water boiling and then put my steamer basket full of eggs over it (with the lid on!) and let them steam for about 12 minutes. Immediately put them in cold water to stop the cooking process then peel. And ta-da, perfect peeled eggs! Unless your 3 year old insists on peeling his own... ;)

I have to agree with the steaming. My mother-in-law give me an egg steamer last year and it really does make a difference in peeling fresh eggs. After cooking, we put ours in ice water and let them sit for a while and it really helps!
I have noticed that if I remember to put salt in the water, it helps them peel better. But I like this idea. I'll have to try it! Have you found it takes a little longer to steam, or the same amount of time as you would normally boil them for? Here at almost sea level, my eggs are perfectly boiled in 10 minutes; my husband likes soft boiled eggs, so I take his out half way through.
Ahhh, this is great! I purposely clicked on your link over at The Better Mom link up to see if it would give a hint on how to peel fresh boiled eggs! I'm going to have to try this tomorrow...or now. I've been craving boiled eggs but don't make them because they all end up like your first picture and I feel it's such a waste of egg. Yum, here I go! Thanks so much for the great tip!
Hi Jessica ~ I usually do 12 minutes (a little longer than boiling) and then put them right into cold water to stop the cooking. I think this makes them perfect, not soft, and not overcooked! Enjoy!
